<P>PROBLEM TO BE SOLVED: To obtain a slime-removing agent that can simply remove the slime is formed, when refrigerated fishes and shellfishes are thawed. <P>SOLUTION: This slime removing agent for refrigerated fishes and shellfishes contains an organic acid. The slime removing agent containing the organic acid is used for removing the slime formed when refrigerated fishes and shellfishes are thawed. A two-step preparation is constituted with an alkalinity regulating agent and a slime-removing agent that is used after the treatment with the alkalinity regulating agent. In the treatment of refrigerated food, the refrigerated food is thawed, soaked in an alkalinity regulating agent, then dipped in the slime removing agent.
