1. The method of producing amylase, characterised in that a culture of Lactococcus lactis strain, containing integrated pIBB500, pIBB501 or pIBB502 plasmid is established on BHI medium with an addition of a sugar, preferably maltose or starch, which induces enzyme production. The culture is incubated at the temperature of 25-35 degrees Celsius. Then, the culture is centrifuged, cells are separated and the pure supematant containing amylase is frozen at the temperature of minus 20 degrees Celsius or used directly for further determinations. |
