<P>PROBLEM TO BE SOLVED: To provide water-soluble food and beverage into which a wide variety of edible substances that are hardly soluble in cold or warm water are solubilized without limitation in flavonoids and a method for simply and safely produce the water-soluble food and beverage having above-stated properties. <P>SOLUTION: The water-soluble food or beverage comprises (a) edible food that is hardly soluble in cold or warm water, (b) one or more kinds of solubilizing agents selected from stevia extract, enzymatically treated stevia, enzymatically treated rutin and enzymatically treated hesperidin. The method for producing the water-soluble food and beverage comprises mixing the components (a) and (b). In a preferred embodiment, the component (a) comprises (a-1) at least one or more kinds selected from ginkgo leaf extract, pine bark extract, peanut seed coat extract, grape seed extract, glycyrrhizin extract and soybean extract and/or (a-2) other crude drug components. In another preferred embodiment, the water-soluble food and beverage contains the component (b) in an amount of 0.1 to 100 pts.wt. per 1 pt.wt. of the component (a). <P>COPYRIGHT: (C)2005,JPO&NCIPI |
