<P>PROBLEM TO BE SOLVED: To provide a method for treating a tyrosine-containing food by which the reduction of a commercial value caused by the precipitation of the tyrosine is prevented. <P>SOLUTION: 1. This method for treating the tyrosine-containing food involves cooling a solution while stirring the solution after dissolving the contained tyrosine by heating the tyrosine-containing food. 2. The method for treating the tyrosine-containing food comprises the following steps: (1) a step for dissolving the contained tyrosine by heating the tyrosine-containing food, (2) a step for cooling the food after heating while stirring the solution, (3) a step for attaching the tyrosine on the inner surface of a preservation vessel by preserving the cooled food in the preservation vessel for a prescribed period, and (4) a step for filling a container for shipping with the food in the preservation vessel. 3. The tyrosine-containing food is preferably unrefined lees of soy sauce, Miso (fermented soybean paste), cheese or Japanese Sake (rice wine)-like seasoning in the method for treating the tyrosine-containing food described in 1. or 2. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
