FIELD: food industry. ^ SUBSTANCE: the present innovation deals with technology to manufacture dried provisions to be further applied in the composition of sterilized canned food. While preparing plant raw material before drying it is necessary to treat it with a preparation obtained out of Mortierella minutissima micromycete biomass according to the preset technique to be kept then for a certain period of time. The innovation enables to increase stability of provisions form at subsequent restoration, at heating up to the temperature of canned food sterilization, as well. ^ EFFECT: increased quality of provisions. ^ 3 ex |
