<P>PROBLEM TO BE SOLVED: To provide a method for processing shark meat comprising a simple processing process so as to obtain shark meat as a food material usable for cooking by a broad range of cooking method. <P>SOLUTION: This method for processing shark meat comprises a pre-processing process 11 where a part to be processed is cut off to separate it from a shark body, a soaking process 12 where the shark meat obtained after the pre-processing process 11 is soaked in perilla-containing water and aged for a predetermined soaking period of time, and a drying process where the shark meat aged for the predetermined soaking period of time is taken out and dried for a predetermined drying period of time. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
