Collagen fibres are prepared by extracting collagen in water at 30 DEG to 80 DEG C. and at a pH of from 6,6 to 2,2 to obtain high molecular weight cross-linked acid-precursor gelatin, and precipitating a substantial portion of the acid precursor gelatin from an aqueous organic acid solution thereof by removing acid from the solution to obtain collagen fibres having axial banding of about 640 when viewed in the electron microscope. The acid is preferably removed by dialysis against cold water.
