It is intended to provide a rice flour composition containing neither wheat flour nor any wheat flour-origin components with which cakes excellent in appearance, inner texture, taste and shelf-life can be produced by the same processes for producing the existing cakes; dough and cakes with the use of the composition; and a process for producing such a cake. Namely, a rice flour composition for cakes which contains rice flour as the main component and is free from wheat flour or wheat flour-origin components; dough and cakes produced by using the rice flour composition; and a process for producing a cake comprising rice flour as the main component which involves the step of adding a liquid to the rice flour composition and mixing to give dough, and the step of shaping the dough and cooking by baking, frying, steaming, microwave-heating or heating under elevated pressure. |
