In a process to prepare pre-packed moist dumplings, the dry starch-based ingredients represent 25 to 45% of the weight. The ingredients further include 2 to 9% fat or oil, 1-5% egg white protein and 45-60% water. In the case of bread dumplings the dry starch material consists of 40% dry breadcrumbs. In the case of potato dumplings the dry mashed potato represents 40% of the moist dumpling. The dumplings are pasteurised. |
