Vegetables and fruits, e.g. peeled apples, potatoes and onions, scraped carrots, and cauliflowers, are coated by first applying a solution of a water-soluble, non-toxic alginate and then coagulating the film of alginate solution. The food articles may be successively immersed in or sprayed with a 5-10% solution of calcium chloride, acetate or lactate and a 0.5-5% solution of sodium alginate. The alginate layer sloughs off in cooking the products. |
