PROBLEM TO BE SOLVED: To provide a method for manufacturing optical fiber sensors at high accuracy by minimizing influence to be exerted on the sensing characteristic of a coat layer of an optical fiber or a re-coated layer re-coated after forming a fiber Bragg grating (FBG). SOLUTION: In the method for manufacturing an optical fiber sensor 1 by which a fiber Bragg grating (FBG) 5 is formed on an optical fiber 8, a coat layer 3 covering a part forming the FBG 5 of the optical fiber 8 is dissolved in a solution and removed.
