FIELD: food-processing industry and canned food industry. ^ SUBSTANCE: method involves preparing fruits; providing cavitational grinding thereof in liquid medium in rotary-cavitational extractor; separating pulp; adding sugar solution and sterilizing, with sugar solution being added before cavitational grinding process. Sugar solution is added in conjunction with preparation produced by sequential extraction of Mortierella gamsii micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue. Said preparation is added in an amount of 0.1% by weight of fruits. ^ EFFECT: improved quality of canned foods.
