In producing readily reconstitutable, dehydrated cooked mashed potato made by cooking pieces of potato in hot water or steam, mashing the cooked pieces and drying the mashed potato on a heated surface, the pieces of potato are, after cooking, exposed to a current of air to remove moisture from the surface of the pieces to impart a mealy appearance thereto. Warm air may be passed over the cooked potato pieces on a screen or the cooked potato pieces may be tumbled in a rotating wire basket. For drying the mashed may be passed into a nip of 0.002-0.004 in between two rotating heated drums, the particles of dehydrated product being 3-4 potato cells in thickness.
