PROBLEM TO BE SOLVED: To substantially facilitate the red heat state changeover control of a combustion surface. SOLUTION: A gas infrared roaster is provided with a roasting rack 17 for mounting cooking objects, a totally aerated burner 2 including a burner plate 25 whose combustion surface faces the cooking object mounted on the roasting rack 17, and a safety valve 51 and a blower 73 for combustion for respectively supplying a fixed amount of fuel gas and a variable amount of air to the totally aerated burner 2. The blower 73 for the combustion is constituted such that the red heat state of the combustion surface of the burner plate 25 is turned to a strong state by turning an air amount to be supplied to the totally aerated burner 2 to a prescribed amount for the fixed amount of the fuel gas and the red heat state of the combustion surface of the burner plate 25 is turned to a state weaker than the strong state by making the air amount to be supplied to the totally aerated burner 2 be more than the prescribed amount.
