<P>PROBLEM TO BE SOLVED: To obtain a green tea-like flavored composition having high palatability and sustainability and effect of improving flavor of the raw material of food and masking peculiar smell, safe in both acid and basic areas and free from damaging the action and function of the raw material of food, in view of the fact that a conventional green tea flavored composition is not necessarily satisfactory in aspects of masking of a raw material used for food, improvement of flavor of the raw material and palatability such as refreshing feeling, and to provide food and drink containing the flavored composition. <P>SOLUTION: This green tea-like flavored composition is obtained by formulating at least one kind of spice selected from the group consisting of specific natural spice, hydrocarbons, alcohols, aldehydes, ketones, acids, esters, lactones, nitrogen-containing compounds, sulfur containing compounds, phenols, furans and pyrans. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
