The slicing machine incorporates a slice thickness regulator that adjusts the gap between cutting blades (5) by rotating a blade supporting frame (7, 7') with a holder (8) to maintain the angle of the blades as they are moved from one position to another. The frame has articulated upper (11) and lower (12) supports which have one end holding a blade and the other pivoted to a counter-frame, with both frame and counter-frame oscllating on sliders (9, 13) that rotate about vertical axes.
