<P>PROBLEM TO BE SOLVED: To provide roasted unpolished green rice so made as to promote its broad use for health/luxury food or instant food soft, easy to eat and having good flavor and good palate feeling. <P>SOLUTION: The roasted unpolished green rice as a health/luxury food product is obtained through the following process: reaping slightly greenish rice ears just before the rice ears grow up to become golden-eared whole grains followed by regulating the moisture of unhulled rice to 15 wt.% followed by further soaking the unhulled rice for about 15 hours; subjecting the unhulled rice to pan-roasting; treating the pan-roasted unhulled rice with a rice huller to obtain unpolished rice; treating the unpolished rice with a rice mill; rolling the milled rice with a rolling mill to obtain pressed roasted unpolished rice; sieving the unpolished rice to make the grains have even sizes followed by charging an appropriate amount of the unpolished rice in a package; and subjecting the package to vacuum packaging for long preservation and flavor retention so as to manufacture the unpolished rice as roasted unpolished green rice on a commercial basis. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
