The procedure consists of placing a certain quantity of the bulk-frozen food product (P) in a perforated drum (20) which is rotated about its axis at a sufficient speed for the product to be formed into a layer against the drum's inner surface by centrifugal force while it is thawed by a flow of a hot fluid, and the resulting liquids (E) pass through the drum wall to be collected in a funnel (40). The hot fluid used to thaw the product can be air, steam or water, or it can be a brine with a reduced freezing point to melt ice at a temperature below 0 degreesC. After the product has been defrosted it can be separated from the surface of the drum by jets of a gas, such as air, directed through the drum wall from the outside. In addition to the rotating drum and drive, the apparatus incluses feed and discharge conveyors (8, 9), a heater and a liquid collector. |
