PROBLEM TO BE SOLVED: To easily and efficiently maintain a suitable storage condition in storage of a fermented food. SOLUTION: In a pit P having an air supplying means SF for feeding the outside air into the pit P and an exhausting means EF for exhausting the air in the pit, a point 1 km or more beyond a pit head PH with a depth of 80 m or more based on the altitude (zero) of the pit head PH, which is never influenced by the air blowing by the air supplying means SF and the exhausting means EF is used as a storage space SS. This storage comprises a temperature adjusting means TA for adjusting the temperature of the storage space SS, a humidity adjusting means HA for adjusting the humidity of the storage space, and a lighting means LA for keeping the storage space at a predetermined luminance.
