PROBLEM TO BE SOLVED: To provide a mushroom culture method where temperature, moisture, and the like, are surely regulated, high cleanliness is maintained so as to enable stable harvest of high-quality mushrooms in the artificial culture of mushrooms such as Lyophllum decastes. SOLUTION: The mushroom culture method comprises the following processes: a process of bottling culture medium followed by sterilizing the bottled culture medium, and standing the sterilized culture medium to cool for one day under such a condition as to have an air cleanliness class of 500-2,000, a room temperature of 15-25°C and a relative humidity of 50-70%; an inoculation process of inoculating spawn into the culture medium in an air cleanliness class of 500-2,000, at a room temperature of 15-25°C and a relative humidity of 50-80%; and a rooting process of rooting under the condition having an air cleanliness class of 500-2,000, a room temperature of 15-25°C and a relative humidity of 70-90% so as to grow the inoculated spawn. In the method, the temperature, humidity, air cleanliness, and the like, in the cultivation chamber are regulated so as to stably harvest high-quality mushrooms. COPYRIGHT: (C)2005,JPO&NCIPI
