PROBLEM TO BE SOLVED: To provide a machine for producing bread with its inner phase uniform and formed in longitudinal texture and trimmed appearance, and to provide a method for producing such bread using the machine. SOLUTION: The machine for producing bread includes a baking unit for baking bread dough charged into a food mold. In this machine, the baking unit comprises a bottom heating means for preferentially heating the bottom of the food mold and a side heating means for preferentially heating the sides of the food mold. Both of the heating means are constituted of means for convecting hot air to the vicinities of the bottom and the sides of the food mold, respectively. Each of the heat-convective means is constituted of a blow pipe 16 provided with a plurality of blow-off holes 20 via which hot air is blown off, wherein the spacing P between the adjoining holes 20 is set at a dimension somewhat larger than the width W of the food mold.
