本发明系开发一可在加热前之预处理阶段时用于热烹调动物与鱼类食品的肉质改良剂,藉此,纵使在室温下或是冷藏或冷冻下储存24小时后,也可保有柔软感、多汁感及含纤维质感,同时还可使收得率维持和常用产品一样,味道也不会变差。该肉质改良剂包含在每重量份之焙烧盐下含有0.001至0.1重量份之谷胱甘、2.5至5.5重量份糖醇、及1.0至2.5重量份藉使淀粉酯化或/及醚化所得之淀粉衍生物。
