Process and assembly to remove a sample of liquid milk from a bulk holding tank holding layers of milk

In a process to take a sample of milk from a milk holding tank (1) a sample abstraction container (3) is lowered into the tank and removes a sample that is representative of the layer (A) of milk concerned. The sample abstraction container is lowered vertically through the milk layers to the depth from which the sample is required, following which milk is admitted to the sample holder. Also claimed is a commensurate milk sampling device having a moving piston within a cylinder.
