It is intended to provide a bitter seasoning aiming at seasoning foods with well-balanced five tastes. More specifically, it is intended to provide a bitter seasoning containing, as the active ingredient, a bitterness compound originating in zanthoxylum which is a food material having been taken by humans for a long time and being highly safe. When used in an appropriate amount, the bitter seasoning is highly useful in preparing a food with well-balanced five tastes. Because of falling within the category of "bitterness" among the five tastes, this bitter seasoning has an effect of promoting small intestinal movements, an effect of improving blood flow, an antiinflammatory effect, an effect of relieving intestinal ailment and so on.
