<P>PROBLEM TO BE SOLVED: To provide a method for culturing an anaerobic bacterium by which survival rate of the anaerobic bacterium such as bifidobacterium or lactic acid bacterium can be improved and improve aerobic viable count of the bacterium in a food containing bifidobacterium or lactic acid bacterium. <P>SOLUTION: An anaerobic bacterium composition is obtained by formulating calcium phosphate with anaerobic bacterium such as bifidobacterium or lactic acid bacterium. A fermented food is obtained by formulating the anaerobic bacterium composition with a food containing bifidobacterium or lactic acid bacterium. As the calcium phosphate, calcium hydrogen phosphate dihydrate, calcium hydrogen phosphate anhydride, tricalcium phosphate, calcium hydrogen diphosphate, calcium pyrophosphate, calcium tetracalcium, hydroxyapatite, calcium octaphosphate, whitlockite or amorphous calcium phosphate is used. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
