PROBLEM TO BE SOLVED: To surely perform the opening / closing operation of a safety switch corresponding to mounting / demounting of a heater to/from a storage device. SOLUTION: The electric fryer is provided with the storage device 11 storing liquid, the heater 12 detachably mounted on the storage device 11 for heating the liquid in the inside 11a of the storage device, and the safety switch 14 and an operation device 15 arranged on the inner side of the electric box 13 of the heater 12, and the safety switch 14 is opened and closed by the operation device 15 at the time of mounting the heater 12 on the storage device 11. The operation device 15 comprises a detector 18 freely movable forwards and backwards and provided with a projection part 17 inserted into the through-hole 16 of the electric box 13 and projecting forwards to the outer side of the box and a coil spring 19 provided concentrically to an axial center A along the forward and backward movement directions of the detector 18 for energizing the detector 18 in the direction of forward projection.
