<P>PROBLEM TO BE SOLVED: To provide a method for producing a cup-packaged food comprising an aseptic filling process using a solid ingredient-containing liquid food as a content so as to prevent blowout of the inside solid ingredients when heating the food together with the package with a microwave oven. <P>SOLUTION: This method for producing the cup-packaged food comprises the following process: using a liquid food obtained by mixing a soup liquid material with solid ingredients as contents; filling the contents into a container sterilized in almost aseptic atmosphere via an aseptic filling process, and sealing up the container so as to become applicable to microwave oven use. The method specifically comprises hardening the solid ingredients by changing the nature of pectin existing in their cell walls, or the like; sterilizing the solid ingredients subjected to the hardening treatment in such a condition as to mix the soup liquid material produced by an appropriate method with the solid ingredients at high temperatures in a short time; and cooling the ingredients to have normal temperature followed by charging the ingredients into a cup container via the aseptic filling process. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
