To give an intermittent cooling and mixing action, to a foodstuff in a fluid state, a vessel (2) has a rotating stirrer (6) to move the foodstuff along the vessel wall (8). The vessel has a double wall (9), with a heat carrier medium flowing through the gap (10) between the walls, which is cooled and returned as a coolant flow through the wall space.
