摘要 FIELD: confectionery industry, in particular, process for obtaining of soft caramel. ^ SUBSTANCE: method involves mixing and boiling at least sweet substance, plasticizer, emulsifier and structurizer until predetermined content of dry substances is reached, with mixture of acid polysaccharides and specific preparation being used as emulsifier and structurizer. Said preparation is produced by sequential extraction of Saprolegnia parasitica micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue. Ratio of acid polysaccharide and biomass preparation used is close to equivalent ratio with regard to amount of free carboxyl groups of acid polysaccharide and number of hydroxyl groups of said preparation. Using the mixture of acid polysaccharides with preparation produced from Saprolegnia parasitica micromycet biomass by predetermined process allows said mixture to be used as substitute of structurizer and emulsifier. ^ EFFECT: reduced consumption of structurizer and emulsifier. ^ 2 ex
