PROBLEM TO BE SOLVED: To develop various applications utilizing the antifreeze effects of antifreeze proteins without using antifreeze proteins. SOLUTION: The ice crystal growth suppressing agent comprises a nonprotein substance which is precipitated in a 10 mg/mL-dense water solution into disk-shape ice crystals with surfaces not flat. The ice crystal growth onset temperature lowering agent comprises a nonprotein substance with its 10 mg/mL-dense water solution exhibiting thermal hysteresis of≥0.020°C. The water coagulation controlling agent comprises a nonprotein substance whose water solution having a concentration of 10 mg/mL exhibits thermal hysteresis of≥0.020°C and allows the precipitation of disk-shaped ice crystals with surfaces not flat.
