摘要 PROBLEM TO BE SOLVED: To provide a method for producing half fermented tea beverage having high content of flavor components through introducing an easy method. SOLUTION: This method for producing the half fermented tea beverage comprises performing high-temperature extraction for half fermented tea using hot water in which sodium ascorbate is dissolved. As a result of this, it is possible to reduce the deterioration of flavor caused by a half fermented tea extracting operation and produce the half fermented tea with favorable flavor and taste.
