PROBLEM TO BE SOLVED: To provide buckwheat confectionery making the best use of sweetness peculiar to buckwheat flour is brought into play, not becoming hard soon, and not broken into pieces. SOLUTION: The buckwheat confectionery is obtained through the following processes: a process of stirring margarine until it becomes creamy; a process of mixing the creamed margarine with sugar and trehalose and kneading the obtained mixture; a process of mixing the margarine kneaded together with the sugar and the trehalose with stirred whole egg and kneading the obtained mixture; a process of mixing the margarine kneaded together with the whole egg, the sugar and the trehalose with buckwheat flour and baking powder and kneading the obtained mixture; a process of mixing the margarine kneaded together with the buckwheat flour, the baking powder, the whole egg, the sugar and the trehalose with dry fruit soaked in alcohol and kneading the obtained mixture; a process of charging a mold with the margarine kneaded together with the dry fruit, the buck wheat, the baking powder, the whole egg, the sugar and the trehalose; and a process of cooking the resultant mixture in the mold.
