<p><P>PROBLEM TO BE SOLVED: To provide a pickling paste device with which oozed solution produced in pickling paste can be taken out or reused without any labor; and to provide a method for regulating salt in pickling paste. <P>SOLUTION: The pickling paste device 1 has the following structure: a pickling tub container 16 to be charged with pickling paste P such as rice-bran paste comprises biscuit pottery; the pickling tub container 16 is integrated in a water catch container 9 where the oozed solution D produced in the pickling paste P can be reserved; a refrigerant circuit 18 formed by connecting a refrigerant compressor 19, a condenser 20, a pressure reducing valve 21, an evaporator 22 and an accumulator 23 in a circular arrangement is provided; and the water catch container 9 is equipped with the evaporator 22 in the refrigerant circuit 18 to cool the inside of the water catch container 9.
