YEAST STRAIN HIGHLY PRODUCING ISOAMYL ALCOHOL AND ISOAMYL ACETATE, METHOD FOR SCREENING THE SAME AND METHOD FOR UTILIZING THE STRAIN

PROBLEM TO BE SOLVED: To provide a method for screening a yeast strain highly producing isoamyl alcohol and/or isoamyl acetate; to provide a method for readily and efficiently producing the isoamyl alcohol and/or the isoamyl acetate; and to provide the yeast strain highly producing the isoamyl alcohol and/or the isoamyl acetate.

SOLUTION: The yeast capable of proliferating under 10-100 MPa pressure is selected by culturing the yeast under the pressure, or the yeast capable of proliferating at 4-17°C is selected by culturing the yeast at the temperature. The obtained strain capable of highly producing the isoamyl alcohol and/or the isoamyl acetate is cultured to produce the isoamyl alcohol and/or the isoamyl acetate by the yeast strain.
