<P>PROBLEM TO BE SOLVED: To enhance antioxydation power of unrefined vinegar by utilizing properties of green tea in unrefined vinegar produced by using unrefined sake as a raw material generated in the production of Awamori (millet brandy) or Shochu (Japanese distilled spirit). <P>SOLUTION: DPPH radical scavenging activity is increased by addition of components of green tea during a process for producing unrefined vinegar by using unrefined Awamori or Shochu as a raw material or after the production. Consequently, a free radical formed in vivo is captured/scavenged and life style-related diseases such as arteriosclerosis, hypertension, heart disease, etc., are prevented. Other actions such as inhibition of linoleic acid autoxidation, inhibition of β-carotene discoloration, inhibition of rabbit hemocyte membrane, etc., are enhanced besides DPPH scavenging activity. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
