The invention relates to a method for the industrial preparation of essentially solid foods. The foodstuffs are finely comminuted in at least one comminting step, in at least one added, liquidic dispersion agent from the following groups; a) an oily medium, b) a fatty medium, c) a volatile medium, especially pressurised propane, d) mixture of at least two media of a) to c). The invention also relates to a corresponding device, foodstuffs prepared or produced according to the inventive method and food products containing said food stuffs.
