摘要 PURPOSE: Provided are the mulberry leaf-containing dough and mixed stuffings of chinese pancake which prevent adult diseases, such as diabetes and maintain the human health. CONSTITUTION: The mulberry leaf-containing dough of chinese pancake is characterized by containing 0.05wt.% of mulberry powder, 0.73 wt.% of unpolished rice flour, 2.2 wt.% of glutinous rice flour, 0.73 wt.% of wheat flour, 0.55 wt.% of glutinous starch, 0.73 wt.% of sugar, 0.18 wt.% of starch, 0.18 wt.% of glucose, 0.02 wt.% of vanilla flavor, 0.009 wt.% of sinhwadang, 0.05 wt.% of powder, 0.36 wt.% of margarine, 0.05 wt.% of salt, 0.02 wt.% of soda, 0.18 wt.% of egg, 0.55 wt.% of edible oil, 0.02 wt.% of yeast, and the balance of water. The mixed stuffings of chinese pancake contain 5.08 wt.% of unpolished rice flour, 25.4 wt.% of black sugar, 25.4 wt.% of brown sugar, 25.4 wt.% of white sugar, 5.08 wt.% of peanut, 8.47 wt.% of sesame seed, 8.47 wt.% of walnut, 1.69 wt.% of pine nut, and 1.69 wt.% of cinnamon.
