摘要 FIELD: production of gelling concentrate, containing structure-forming agents of plant and microbial origin. ^ SUBSTANCE: claimed method includes preparation of white beet root crops and thermal deodorization with carbon dioxide, wherein carbon dioxide is used in above-critical state. Further method includes pressing to produce juice and bagasse; bagasse hydrolysis and extraction with hydrofluoric acid solution, obtained directly in extraction volume during separate feeding of water and liquid hydrogen fluoride. Then extract is separated; juice and extract are blended; and liquid ammonia is fed into blend. Extract, obtained by extraction of biomass of Mortierella sclerotiella micromycete with carbon dioxide in above-critical state in amount of 2 mass % as dry matter, is fed into blend together with ammonia. After extraction with carbon dioxide in above-critical state biomass of Mortierella sclerotiella micromycete is subsequently extracted with water, alkali, water, acid, water, alkali, and water. Obtained solid residue is treated with liquid ammonia and fed into concentrate treated with liquid carbon dioxide in amount being equivalent (in terms of biomass consumption) to extract introduced into blend together with liquid ammonia. Then obtained mixture is heated up to 60°C or more. ^ EFFECT: increased target product yield; product with improved structure-forming properties and decreased raw material consumption.
