Use of gene mutation to produce gamma and beta carotene involves gene mutation of dehydrogenase of phytoene of Fusarium fujikuroi included in a DNA sequence identified as SEQ ID No.3. The method yields Fusarium strains which accumulate gamma- and beta-carotene.
