PROBLEM TO BE SOLVED: To simplify the structure, to save space, and to make maintenance easy in an apparatus for cutting and preparing a root hair part and a stem part of bulbous vegetable such as shallots. SOLUTION: This preparing and cutting apparatus comprises two carrying belts 2 that are disposed in parallel and travel at a constant speed and a pressing belt 5 which comes into contact with a lowering part 2b that turns from a horizontal part 2a of each carrying belt to the downside along a pulley and grips the root hair part and the stem part of the bulbous vegetable. A cutter 10 for cutting the bulbous vegetable that is gripped between the carrying belts 2 and the pressing belt 5 and carried is not disposed in the horizontal parts 2a of the carrying belts 2, but is disposed between the lowering parts 2b of the carrying belts 2, and is cut.
