摘要 A process for producing a dry foodstuff, comprising the branching step of branching foodstuff to thereby obtain branched foodstuff; the excipient mixing step of mixing an excipient into the branched foodstuff to thereby obtain excipient containing foodstuff; the hot air drying step of performing hot air drying until the weight of the excipient containing foodstuff is reduced to 20-70% thereof to thereby obtain hot air dried foodstuff; the compression molding step of performing compression molding of the hot air dried foodstuff to thereby obtain compression-molded foodstuff; and the freeze drying step of performing freeze drying of the compression-molded foodstuff to thereby obtain freeze-dried foodstuff, wherein the compression molding is performed at such a pressure that in the thaw of the freeze-dried foodstuff, satisfactory restoration can be realized. This process provides a molded dry foodstuff that can be stored at ordinary temperature, exhibiting excellent restorability such that voluminousness is felt upon the thaw, and that realizes excellent flavor, color tone and taste, being free from deformation.
