Production of conjugated polyunsaturated fatty acid esters by conversion with 1-5C alcoholates of non-conjugated polyunsaturated fatty acid esters consisting of 1-5C alcohol residues and 10-24C fatty acid residues is effected under solvent-free conditions using a phase-transfer catalyst.
