<P>PROBLEM TO BE SOLVED: To provide a method for effectively reducing nitrate ion from carrot juice to be used as a raw material for vegetable juice, or the like. <P>SOLUTION: A carrot is cut into two pieces in the longitudinal direction so that the cut face may pass through the core part of the carrot and half parts of cut carrot are blanched and the blanched carrot half pieces are squeezed to obtain carrot juice. By cutting a carrot so that the cutting face may pass through the core part in the longitudinal line, the nitrate ion-rich core part is widely exposed and the contacting area between the core part and the blanching water is largely expanded and the nitrate ion is effectively eluted when blanching. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
