<P>PROBLEM TO BE SOLVED: To provide a method for producing dry meat food by which meat consisting mainly of fish meat can be utilized, flavor of the meat can be improved, and soft palate feeling can be imparted to the dry meat food. <P>SOLUTION: The method for producing dry meat food comprises the following processes: a salting process of salting meat; a molding process of molding salted meat; and a drying process of drying molded meat. The salting process involves using meat consisting mainly of fish meat, adding 0.7-2.2 pts.mass of table salt, and 0.1-1.0 pts.mass of polymerized phosphate to 100 pts.mass of salt to make a mixture, and storing the mixture for a predetermined period of time. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
