<P>PROBLEM TO BE SOLVED: To provide a method for producing sauce-containing jelly where jelly and sauce are not mixed together but formed into a clearly separating state when putting the sauce in the interior of the jelly, and applicable to normal-temperature distribution. <P>SOLUTION: This method for producing sauce-containing jelly comprises the following process: charging sauce containing a polysaccharide having pseudo plastic viscosity, and adjusted so as to have 200-1,500 mPa s of the viscosity at 0-20°C to jelly liquid containing deacylation-type gellan gum and native-type gellan gum as essential components, and adjusted so as to have a gelatinization temperature of 60-70°C; adding an alkaline earth metallic salt to both of the jelly liquid and the sauce; and further charging the sauce into the jelly followed by subjecting the mixture to heat-sterilization. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
