摘要 A method for production of pumpkin juice consists in squeezing the juice from raw material, blanching the cake in water, comminuting the cake and mixing thereof with the juice pressed out. Prior to the squeezing the juice the raw material is preliminary frozen, the frozen raw material is defrosted while the juice squeezing, and the juice obtained is subjected to instantaneous sterilization.
