Propylene glycol mixed - ester - containing emulsifiers for dry cake mix shortenings are prepared by heating propylene glycol and a triglyceride or triglycerides at a temperature above the melting point of the triglyceride but no higher than 250 DEG F. in the presence of an alkali metal methylate catalyst. The catalyst is removed from the resulting mixture by addition of phosphoric acid or water and subsequent filtration to remove the salts so formed. It is preferred to use 1-20% by wt. propylene glycol and 99-80% by weight of triglyceride. Lard is the preferred triglyceride but other fats and oils, e.g. tallow, grease, or coconut, soybean or cottonseed oil may be used. The emulsifier mixture contains mono- and di-esters of propylene glycol, mono-, di- and triglycerides and small amounts of propylene glycol.ALSO:Propylene glycol mixed esters are prepared by heating propylene glycol and a triglyceride or triglycerides at a temperature above the melting point of the glyceride and not higher than 250 DEG F. in the presence of an alkali metal methylate catalyst. The preferred triglyceride is lard. It is preferred to use 1-20% by weight propylene glycol and 80-99% by weight of triglyceride. The resulting product is a mixture of propylene glycol-mono- and diesters, glycerol mono-, di- and tri-esters and small amounts of free glycol. After completion of the reaction the catalyst may be inactivated by addition of phosphoric acid or water. The propylene glycol ester-containing product may be used as an emulsifier for cake mix shortenings (see Division A2). |
