PROBLEM TO BE SOLVED: To provide a method for quickly classifying (demulsifying), for example, even an emulsion in which such droplets of a minute particle size as are generated with a device such as a "micro mixer" are dispersed, and a classifier of the emulsion. SOLUTION: This classifier has a passage (structure) for flowing the emulsion between at least two plates (an upper plate 2, a lower plate 4) placed apart at an interval of a smaller size than that of the largest particle of the droplets contained in the emulsion.
