PURPOSE: Processed meat for a hamburger patty comprising chestnut powder containing chestnut meat and its inner skin, starch, salt and spices is provided. It prevents oxidation of fat by a tannin component contained in the inner skin of the chestnut when stored in a frozen state and the meaty smell is removed from it by heat decomposition of the tannin component. Therefore, the flavor of the processed meat is improved. CONSTITUTION: A mixture of 15 to 20 parts by weight of chestnut powder containing chestnut meat and its inner skin, 5 parts by weight of starch and a suitable amount of salt is added to 100 parts by weight of meat emulsion and formed into a hamburger patty having a flat disk shape after kneading. Then, the patty is heated in an oven at 180 to 220deg.C for 5min and then stuffed between hamburger buns together with sliced onion and carrot. |
