In a process for dehydrating a foodstuff, the foodstuff is contacted with a gas, e.g. air, for at least part of the dehydration process, the gas having a temperature of from 90 DEG C. to 220 DEG C. and containing from 5% to 50% by weight of water vapour. The foodstuff is preferably first partially dried in the humid hot gas and then the drying is completed in a conventional manner, e.g. by bin drying. This double drying process may be preceded by a slight partial drying using conventional methods. Foodstuffs dried in the examples are diced potatoes and carrots, sweet corn, pearl barley, rice, and peas. Corn and potato chips are also mentioned. The foodstuffs may be soaked in sulphite or citric acid solutions before drying. |
